Preheat the oven to 200°C (400°F). Line a baking tray with foil or parchment paper.
Pat the chicken thighs dry with paper towels to help the skin crisp up.
Place the chicken in a bowl. Drizzle with olive oil and toss to coat.
In a small bowl, mix together the salt, pepper, garlic powder, onion powder, paprika, and thyme.
Rub the spice mix evenly over the chicken thighs.
Place the thighs skin-side up on the prepared baking tray.
Bake for 35–45 minutes, or until the internal temperature reaches 75°C (165°F) and the skin is golden and crisp.
Let rest for 5 minutes before serving.
