Spread butter or olive oil on one side of each slice of bread.
Place one slice, buttered side down, in a heated skillet over medium heat.
Layer with half the Parmesan, all the chicken, marinara sauce, and the remaining cheese. Add mozzarella if using.
Top with the second slice of bread, buttered side up.
Grill 3–4 minutes per side until golden brown and the cheese is melted.
Remove from pan, let rest for a minute, then slice and serve warm.
