Comforting Fried Potatoes and Sausage with Onions

Heat the oil or butter in a large skillet over medium heat.

Add the diced potatoes and cook, stirring occasionally, until they start to brown and soften, about 15 minutes.

Push the potatoes to one side and add the sliced sausage to the skillet. Cook until browned, about 5-7 minutes.

Add the sliced onions and cook until they are soft and caramelized, about 8 minutes.

Mix everything together, season with salt and pepper, and cook for another 2-3 minutes to combine the flavors.

Serve hot.
