In a medium bowl or jar, combine coconut milk, chia seeds, maple syrup (or honey), vanilla extract, and sea salt.

Stir thoroughly to ensure the chia seeds are evenly dispersed.

Let the mixture sit for 5 minutes, then stir again to prevent clumping.

Cover and refrigerate for at least 4 hours or overnight to allow the chia seeds to absorb the liquid and form a pudding-like texture.

Before serving, stir the pudding once more and add your preferred toppings.
