Ingredients

500 g (1 lb) mixed mushrooms (cremini, button, or portobello), sliced

1 tablespoon soy sauce or tamari

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 tablespoon flour (all-purpose or gluten-free)

1 cup (240 ml) vegetable broth

1 cup (240 ml) unsweetened plant-based cream (soy, oat, or cashew)

2 teaspoons Dijon mustard

Salt and pepper to taste

Fresh parsley, chopped (for garnish)
