In a mixing bowl, beat cream cheese, powdered sugar, and vanilla extract until smooth.
In another bowl, whip the heavy cream until soft peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Stir in the drained crushed pineapple and shredded coconut (if using).
In serving glasses or a dish, layer crushed graham crackers and pineapple cream mixture alternately.
Chill in the refrigerator for at least 4 hours, or until set.
Garnish with fresh pineapple slices or mint before serving.
