Melt-in-Your-Mouth French Pineapple Cake

Mix water, cornstarch, and sugar in a pan.

Add chopped pineapple and bring to a simmer.

Stir until thickened, then set aside.

Step 2: Make the Cake Base
In a saucepan, melt the butter and bring it to a boil.

Add the flour all at once, stirring until a dough forms.

Remove from heat, let cool for 5 minutes.

Add eggs one at a time, beating well after each addition.

Spread half the dough into a greased round cake pan.

Pour the pineapple mixture on top.

Add remaining dough over the fruit layer.

Step 3: Bake
Bake at 180°C (350°F) for 30–35 minutes or until golden.

Let cool slightly.

Step 4: Mascarpone Cream Topping
Mix mascarpone, condensed milk, and vanilla sugar until smooth.

Spread over the cooled cake.

Dust with powdered sugar before serving.
