Dutch Oven Roast Chicken | Juicy, Flavorful & Easy Classic

Preheat oven to 375°F (190°C).

Pat the chicken dry and rub all over with olive oil, salt, and pepper.

Stuff the cavity with lemon halves, smashed garlic, and onion quarters (plus herbs if using).

Place the chicken breast-side up in the Dutch oven.

Cover with the lid and roast in the oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).

Remove the lid for the last 15 minutes to crisp the skin.

Let rest 10 minutes before carving.
