Preheat oven to 180°C (350°F).
In a skillet, heat a little oil. Sauté onion and mushrooms for about 5–7 minutes until softened.
In a large bowl, beat the eggs with sour cream. Add salt and pepper.
Mix in the cooked onion-mushroom mixture, diced potatoes, sausages, spring onions, and half of the cheese.
2. Assemble and Bake:
Lightly grease a baking dish.
Pour the mixture into the dish and top with sliced tomatoes.
Sprinkle the remaining cheese on top.
Bake for 40–50 minutes, or until golden brown and the potatoes are tender.
3. Make the Creamy Dill Sauce:
In a bowl, mix sour cream (or yogurt), dill, garlic, lemon juice, and mayo if using.
Season with salt and pepper. Chill until serving.
