Apple, Carrot & Oatmeal Bites (No Sugar, No Flour)

Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.

In a large bowl, combine the blended oats with baking powder.

Add milk and mix until the batter is thick.

Stir in grated carrot, grated apple, chopped apricots, and raisins. Mix well.

Let the mixture sit for 5 minutes so the oats absorb some moisture.

Using a spoon, scoop the mixture into small mounds on the tray.

Bake for 20–25 minutes or until golden and slightly firm.

Let cool completely before storing.
