Cut zucchinis into fries about 3-4 inches long and 1/2 inch thick.
Set up dredging stations:
Place flour in one bowl, beaten eggs in another, and mix panko, parmesan, garlic powder, salt, and pepper in a third bowl.
Coat the zucchini:
Dip each zucchini stick first in flour, then egg, then breadcrumb mixture. Press breadcrumbs firmly to coat well.
Air fry:
Preheat air fryer to 400°F (200°C). Spray zucchini fries lightly with cooking spray. Place fries in a single layer in the basket (cook in batches if needed). Air fry for 10-12 minutes, turning halfway, until golden and crispy.
Make the garlic aioli:
Mix mayonnaise, minced garlic, lemon juice, salt, and pepper in a small bowl.
Serve:
Serve zucchini fries hot with garlic aioli on the side.
