Vegetable Soup – A Healing Soup for Your Stomach

Heat a pot over medium heat and add a splash of oil (optional).

Sauté the chopped onion and minced garlic until fragrant and translucent.

Add the diced carrots, chopped celery, and potatoes. Cook for 5 minutes, stirring occasionally.

Pour in enough water or vegetable broth to cover the vegetables.

Bring to a boil, then reduce heat and simmer until the vegetables are tender (about 20 minutes).

Add the frozen peas and cook for another 5 minutes.

Season with salt, black pepper, red pepper, and oregano to taste.

Stir well and serve warm.
