Vegan Zucchini Stick Fritters

Grate the zucchinis and squeeze out excess moisture using a clean kitchen towel or cheesecloth.

In a small bowl, combine the ground flaxseed with water and let it sit for 5 minutes to thicken.

In a large mixing bowl, mix grated zucchini, chickpea flour, nutritional yeast, chopped onion, minced garlic, smoked paprika, salt, pepper, parsley, and the flax egg until well combined.

Heat olive oil in a skillet over medium heat.

Take a handful of the mixture and form it into small stick-shaped fritters.

Fry the fritters in batches, about 3-4 minutes per side or until golden brown and crispy.

Remove from the pan and drain on paper towels.

Serve warm with your favorite vegan dip or sauce.
