Vegan Peach Cobbler

Preheat oven to 180°C (350°F). Lightly grease a baking dish.

In a bowl, combine the peaches, maple syrup, cornstarch, vanilla, cinnamon, and lemon juice. Mix well and pour into the baking dish.

In a separate bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.

Add plant-based milk and melted coconut oil. Stir just until combined (do not overmix).

Spoon the batter evenly over the peaches. It doesn’t need to fully cover them.

Bake for 35–40 minutes or until the topping is golden and a toothpick comes out clean.

Let cool slightly before serving.
