Vegan Lentil Banana Muffins

Preheat your oven to 180°C (350°F) and line a muffin tin with paper liners.

In a large bowl, mix mashed lentils, mashed bananas, maple syrup, oil, and vanilla.

In another bowl, combine flour, baking soda, baking powder, cinnamon, and salt.

Gradually fold dry ingredients into the wet mixture until just combined.

Stir in any optional add-ins like walnuts or chocolate chips.

Divide batter evenly into the muffin tin.

Bake for 20–25 minutes, or until a toothpick inserted in the center comes out clean.

Let cool in the tin for 5 minutes, then transfer to a wire rack.
