Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Slice the Cabbage: Remove any damaged outer leaves. Cut the cabbage into 1-inch thick slices (steaks).
Make the Seasoning: In a bowl, mix olive oil, garlic, paprika, onion powder, thyme, salt, and pepper.
Brush the Steaks: Place cabbage steaks on the baking sheet and brush both sides generously with the oil mixture.
Bake: Roast for 25–30 minutes, flipping once halfway, until edges are crispy and centers are tender.
Finish: Squeeze fresh lemon juice over the steaks and garnish with parsley. Serve hot!
