Ingredients
For the Roasted Veggies:
1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 zucchini, sliced

1 red onion, sliced

1 tbsp olive oil

1 tsp smoked paprika

Salt and pepper, to taste

For the Spicy Bean Mix:
1 can (15 oz) black beans, rinsed and drained

1 garlic clove, minced

1 tsp ground cumin

½ tsp chili powder

2 tbsp tomato paste

¼ cup water

For the Chipotle Lava Sauce:
½ cup plant-based yogurt or sour cream

1 chipotle pepper in adobo sauce (or 1 tsp chipotle paste)

Juice of ½ lime

Pinch of salt

Other:
2 large flour tortillas

1 avocado, sliced

½ cup cooked rice or quinoa (optional)

Fresh cilantro and lime wedges (for garnish)
