The Classic Elderflower Cordial: A Refreshing Natural Drink for Spring and Summer

Place the elderflower flowers and lemon slices into a large glass jar or bottle.

Pour boiling water over the flowers and lemons, covering them completely.

Cover the jar and leave it in a cool, shaded place for 24 to 48 hours to infuse.

After steeping, strain the mixture through a fine cloth or sieve to remove solids.

Add sugar and citric acid (if using) to the liquid, then gently heat the mixture until the sugar dissolves completely, but do not boil.

Pour the cordial into sterilized bottles and store in the refrigerator.
