Heat olive oil in a skillet over medium heat.
Add diced sweet potato (and onion if using), sauté for 8-10 minutes until tender and slightly browned. Stir occasionally.
Create two small wells in the sweet potatoes and crack the eggs into them.
Cover the skillet and cook for 3-5 minutes until eggs are done to your liking (runny or firm yolks).
Season with salt and pepper, garnish with fresh herbs, and serve immediately.
