Heat olive oil in a skillet over medium heat. Add minced garlic and crushed red pepper flakes, cook for 30 seconds. Add chopped spinach and cook until wilted. Season with salt and pepper. Let cool slightly.
2. Mix the Filling 🧀
In a bowl, combine sautéed spinach with cream cheese and shredded spicy cheese. Stir until creamy and fully mixed.
3. Prep the Pastry 🔪
Roll out the puff pastry sheet and cut into 6 equal squares. Place a generous spoonful of the filling in the center of each square.
4. Fold & Seal ✉️
Fold each square into a triangle or rectangle, pressing edges firmly with a fork to seal. Brush the tops with beaten egg. Sprinkle sesame seeds or chili flakes on top if desired.
5. Bake Until Golden 🔥
Place the pockets on a baking sheet lined with parchment paper. Bake at 400°F (200°C) for 18–20 minutes, or until puffed and golden brown.
