Savory Zucchini Oat Breakfast Patties

Grate the zucchini, sprinkle with salt, and let sit for 5–10 minutes to draw out moisture.

Squeeze out the excess water from the zucchini using a clean towel or cheesecloth.

In a bowl, combine zucchini, oat flakes, grated cheese, eggs, pepper, and spring onions (if using).

Mix well to form a thick batter.

Heat a non-stick pan over medium heat. Lightly grease it if needed.

Drop spoonfuls of the mixture into the pan and flatten gently into patties.

Cook for 3–4 minutes per side, or until golden brown and set.
