My Granddaddy’s Favorite Vegan Zucchini Carrot Pancakes

1. Make the Flax Egg

Mix ground flaxseed with water and let sit for 5 minutes until gelled.

2. Mix the Batter

In a large bowl, combine zucchini, carrot, onion, flour, flax egg, and seasonings.

Mix until you get a thick batter consistency.

3. Fry the Pancakes

Heat a nonstick pan over medium heat and add a bit of oil.

Drop 2-3 tablespoons of batter per pancake and flatten gently.

Fry for 3–4 minutes per side, or until golden brown.

4. Serve & Enjoy

Serve warm with vegan sour cream, avocado, or a dollop of hummus.
