Lentil Meatballs – Hearty, Healthy & Delicious

Preheat Oven: To 375°F (190°C), or heat a non-stick pan with a bit of oil if pan-frying.

Mash Lentils: In a large bowl, mash the cooked lentils with a fork or potato masher until mostly smooth with some texture left.

Mix Ingredients: Add oats, onion, garlic, soy sauce, tomato paste, oregano, paprika, salt, and pepper. Mix well.

Form Meatballs: Shape into small balls (about 1 inch diameter).

Cook:

Oven: Place on a parchment-lined tray, brush lightly with oil, and bake for 20–25 minutes, flipping halfway.

Pan: Fry in a bit of olive oil until golden brown on all sides (about 8–10 minutes).

Serve: With pasta and marinara, in wraps, or as an appetizer with dipping sauce.
