Hearty Vegan Lentil Meatballs

Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

Prepare the flax egg by mixing ground flaxseed with water and let it sit for 5 minutes.

In a pan, sauté the onion and garlic in olive oil until soft.

In a food processor, pulse lentils, oats, cooked onion mixture, tomato paste, soy sauce, herbs, and flax egg until combined but not too smooth.

Form mixture into balls and place on the baking sheet.

Bake for 25–30 minutes, flipping halfway, until firm and golden.
