Hearty Skillet Fried Rice with Ground Beef and Veggies

Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat.

Add ground beef and cook until browned. Drain excess fat.

Add chopped onion and garlic. Sauté for 2–3 minutes until softened.

Push everything to the side of the skillet. Add the remaining oil and pour in the beaten eggs. Scramble them gently.

Add the mixed vegetables and stir everything together.

Add the cold rice, breaking up any clumps.

Pour in soy sauce and oyster sauce. Stir well to combine and heat through.

Season with salt and pepper to taste.

Garnish with chopped green onions if desired. Serve hot.
