Preheat your oven to 175°C (350°F) and line a baking tray with parchment paper.
Roughly chop the peanuts and hazelnuts.
In a large bowl, combine the chopped nuts, pumpkin seeds, sunflower seeds, sesame seeds, dried cranberries, and oats.
Add the mashed bananas and cinnamon (if using), and mix well until everything is combined.
Using a spoon, scoop the mixture onto the baking tray and flatten slightly to form cookie shapes.
Bake for 15–18 minutes or until golden brown around the edges.
Allow cookies to cool on a wire rack before serving.
