In a bowl, combine olive oil, red wine vinegar, oregano, and garlic powder.
Add the chicken pieces and coat them well with the marinade. Cover and refrigerate for at least 1 hour, preferably overnight.
Preheat grill or skillet over medium-high heat. Cook chicken for 5-7 minutes per side until fully cooked and slightly charred.
Let the chicken rest for a few minutes, then slice into strips.
Warm the pita bread, then assemble gyros by placing chicken slices, tomatoes, onions, lettuce, and a dollop of tzatziki sauce inside.
