Preheat oven to 180°C (350°F) and line a baking tray with parchment paper.
In a bowl, combine grated carrot, egg, yogurt, and olive oil. Mix well.
Add flour, baking powder, salt, and herbs. Stir until a soft dough forms.
Divide the dough into 6–8 portions and roll into small balls or ovals.
Place on the tray, optionally sprinkle with grated cheese.
Bake for 18–22 minutes or until golden brown and cooked through.
