Clean and slice the calamari into rings.
Soak in buttermilk for 30 minutes to tenderize and flavor.
2. Prepare the Coating:
In a shallow bowl, mix flour, cornmeal, salt, pepper, and paprika.
3. Heat the Oil:
Pour vegetable oil into a deep skillet or pot (about 2 inches deep). Heat to 350°F (175°C).
4. Coat and Fry:
Remove calamari from buttermilk, letting excess drip off.
Toss in the flour mixture to coat well. Shake off excess.
Fry in small batches (don't overcrowd) for 1.5–2 minutes, until golden.
Remove and drain on a paper towel-lined plate.

Sprinkle with salt, garnish with parsley, and serve hot with lemon wedges or marinara.
