In a bowl, combine cottage cheese, egg, and grated hard cheese.
Add herbs and spices of your choice for flavor.
Gradually mix in rice flour until you get a thick, moldable dough.
Divide the dough into small portions and shape into bagels.
Place the bagels on the baking tray, sprinkle with sesame or other seeds.
Bake for 20–25 minutes or until golden and firm. Let cool slightly before serving.
