Heat olive oil in a large skillet over medium heat. Season the chicken breasts with salt and pepper, then sear them until golden brown on both sides, about 5 minutes per side. Remove and set aside.
In the same skillet, add sliced onions and garlic. Sauté until softened and fragrant, about 5 minutes.
Add the diced tomatoes and cherry tomatoes to the skillet. Simmer for 10 minutes, allowing the sauce to thicken slightly.
Return the chicken breasts to the skillet, nestling them into the tomato sauce. Cover and cook on low heat for 15-20 minutes, until chicken is cooked through.
Remove from heat, top each chicken breast with a generous piece of burrata cheese. Let it soften slightly before serving.
Garnish with fresh basil or parsley and serve warm.
