Preheat oven to 180°C (350°F).
In a bowl, mix flour, sugar, baking powder, and salt.
In another bowl, whisk milk, egg, melted butter, and vanilla.
Combine wet and dry ingredients. Mix until just combined.
Spoon into a greased donut pan.
Bake for 10–12 minutes until golden and firm.
Let cool completely.
2. Make the pastry cream:
Heat milk in a saucepan until steaming.
In a bowl, whisk egg yolks, sugar, salt, and cornstarch.
Slowly pour hot milk into yolk mixture while whisking.
Return to pan, cook on medium until thickened.
Stir in vanilla. Let cool, then transfer to a piping bag.
3. Fill and brûlée:
Use a knife or skewer to make a hole in each donut.
Pipe pastry cream inside.
Sprinkle sugar on top of each donut.
Use a kitchen torch to caramelize the sugar until golden and crispy.
