Introduction
This savory vegan quiche is filled with colorful vegetables and a creamy chickpea flour base that mimics the texture of a traditional egg quiche. Perfect for breakfast, brunch, or a light dinner, it's healthy, satisfying, and entirely plant-based.
Ingredients
Crust (or use store-bought vegan pie crust):
1 1/4 cups (150 g) all-purpose flour
1/4 tsp salt
1/4 cup (60 ml) cold vegan butter or coconut oil
3–5 tbsp cold water
Filling:
1 tbsp olive oil
1/2 onion, diced
1 clove garlic, minced
1/2 zucchini, diced
1/2 red bell pepper, chopped
1/2 cup spinach, chopped
1/4 cup sun-dried tomatoes, chopped (optional)
Chickpea "Egg" Base:
1 cup chickpea flour (besan)
1 1/2 cups water
1 tbsp nutritional yeast
1/2 tsp turmeric
1/2 tsp salt
1/4 tsp black pepper
1 tsp Dijon mustard
Pinch of black salt (kala namak) for "eggy" flavor (optional)
