In a pan over medium heat, melt butter.

Add chopped apples, sugar, and cinnamon.

Cook, stirring occasionally, until apples soften and caramelize (about 5-7 minutes). Set aside to cool.

Make the Muffin Batter:

Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.

In a large bowl, whisk together flour, sugar, baking powder, baking soda, salt, and cinnamon.

In another bowl, whisk melted butter, buttermilk, eggs, and vanilla extract until combined.

Pour wet ingredients into dry ingredients and gently fold until just combined (do not overmix).

Fold in the cooled apple filling carefully.

Bake:

Divide the batter evenly among muffin cups.

Bake for 18-22 minutes or until a toothpick inserted comes out clean.
