Stuffed Potatoes with Minced Meat and Cheese

Preheat the oven to 200°C (390°F).

Prepare the potatoes: Peel and slice the potatoes in half lengthwise. Scoop out the center slightly to create space for stuffing. Brush them with vegetable oil, place them on a baking tray, and bake for 25–30 minutes until tender.

Prepare the filling:

In a pan, heat some oil and sauté chopped onion and garlic until translucent.

Add minced meat and cook until browned.

Stir in diced tomato, red and yellow peppers.

Season with salt, pepper, Provencal herbs, and sweet paprika. Let simmer until soft and flavorful.

Stuff the potatoes: Fill each baked potato with the meat mixture.

Add cheese: Sprinkle grated cheese over the top of each potato.

Bake again: Return to the oven and bake for another 10–15 minutes until cheese is melted and golden.

Serve hot and garnish with herbs if desired.
