Peel, core, and chop the apples into small pieces.
In a bowl, mix oatmeal, chopped apples, eggs, yogurt, and baking powder until well combined.
Pour the mixture into a non-stick pan or baking dish.
Cook on medium heat (if making pancakes) or bake at 180°C (350°F) for 20–25 minutes until set and lightly golden.
Serve warm.
