Pralined Almonds – Making Them at Home Has Never Been So Easy!

In a heavy pan, combine sugar and water. Heat over medium heat without stirring until the sugar dissolves and the mixture begins to boil.

Add the almonds and a pinch of salt. Stir continuously to coat the almonds with the syrup.

Continue cooking, stirring often, until the water evaporates and the sugar crystallizes on the almonds (the mixture will look grainy).

Keep stirring until the sugar melts again and caramelizes, coating the almonds in a shiny, golden glaze. Be careful not to burn the sugar.

Remove from heat and quickly stir in vanilla extract if using.

Spread the pralined almonds on a parchment-lined baking sheet to cool completely and separate.
