Prepare the Filling
Heat olive oil or butter in a skillet over medium heat. Add the onions and bell peppers and sauté for 2–3 minutes. Add the mushrooms and cook until softened.
Cook the Beef
Add the sliced beef to the pan, season with salt, pepper, and garlic powder if using. Sauté until the beef is just cooked through.
Assemble the Quesadilla
Place one tortilla in a clean skillet over medium-low heat. Spread the beef mixture evenly over half the tortilla. Top with shredded cheese.
Fold and Cook
Fold the tortilla in half and press lightly. Cook until golden and crispy (about 2–3 minutes per side), flipping once.
Serve
Slice into wedges and serve hot with your favorite dipping sauce like sour cream or salsa.
