Preheat the oven to 180°C (350°F).
Peel and grate the carrot.
Peel, core, and finely chop or grate the apple.
Soak raisins and dried apricots in warm water for about 10 minutes, then drain and chop apricots finely.
In a large bowl, whisk the eggs lightly.
Add milk, grated carrot, apple, raisins, chopped apricots, oatmeal, and baking powder to the eggs. Mix well until combined.
Pour the mixture into a greased baking dish or lined with parchment paper.
Bake for 30-35 minutes at 180°C until the top is golden and a toothpick comes out clean.
Let cool slightly before serving.
