Prepare Mango Sauce: Peel and chop mangoes. In a saucepan, combine mango, sugar, water, lemon slice, and lemon juice. Simmer on medium heat for about 10 minutes until thickened. Remove lemon slice and cool.
Make Cream: In a bowl, mix mascarpone, powdered sugar, vanilla extract, and 2 tbsp of mango sauce until smooth. Gently fold in whipped cream.
Prepare Topping: Dissolve gelatin powder in 2 tbsp water, warm gently until dissolved, then mix with 1/2 cup mango sauce.
Assemble: Dip lady fingers briefly into mango sauce to soften (do not soak too long). Layer lady fingers in a serving dish, spread half of the mascarpone cream over them. Repeat with another layer of lady fingers and the remaining cream.
Top: Pour mango gelatin topping over the dessert evenly.
Chill: Refrigerate for at least 1 hour before serving for the best texture.
