Lemon Herb Shrimp and Veggie Skillet

Heat olive oil in a large skillet over medium heat.

Add minced garlic and sauté until fragrant, about 1 minute.

Add shrimp, season with salt, pepper, and oregano, and cook until pink and opaque, about 2-3 minutes per side. Remove shrimp and set aside.

In the same skillet, add bell pepper, zucchini, and cherry tomatoes. Cook, stirring occasionally, until tender, about 5-7 minutes.

Return shrimp to the skillet. Add lemon juice and zest. Toss everything together and heat through for 1-2 minutes.

Garnish with fresh parsley and serve immediately.
