Layered Flatbread with Spinach and Green Onion Filling

In a large bowl, whisk together the warm water, egg, and salt. Gradually add the flour, kneading until a soft, elastic dough forms (about 10 minutes). Cover and let rest for 30 minutes.

Prepare the Filling:
In a bowl, mix the chopped spinach, green onions, and a pinch of salt. Set aside.

Divide and Roll:
Divide the rested dough into 6 equal portions. Roll out each portion into a thin circle or rectangle.

Layer and Fill:
Brush the surface with melted butter or oil. Spread a thin layer of the spinach-green onion mixture over the dough.

Roll and Coil:
Roll each sheet into a log, then coil it like a snail shell. Let rest for 10 minutes.

Flatten and Cook:
Gently flatten each coil and roll it out again into a disc. Heat a skillet over medium heat and cook each flatbread for 2–3 minutes per side, until golden and cooked through.
