How to Grow Lots of Ginger in Containers

Buy ginger root from a garden center or reputable source. If using grocery store ginger, soak it in water for 24 hours to remove possible chemicals.

Pick the Perfect Container:
Use a wide, shallow pot (minimum 12 inches wide) with drainage holes. A portable pot is ideal for moving the plant between indoors and outdoors.

Prepare the Soil:
Fill the container with rich, well-draining potting soil mixed with compost or worm castings if available.

Prep and Plant the Ginger:
Cut the ginger root into pieces, each with at least one “eye” (growth bud). Lay pieces in soil with eyes facing up, and cover lightly with 1 to 1.5 inches of soil.

Water and Light:
Keep soil moist but not soggy. Mist regularly for humidity. Place the container in indirect light or partial shade, avoiding direct sun indoors.

Protect from Cold:
Keep the plant in temperatures above 50°F (10°C). Move indoors if it gets colder.

Sprouting: 2–4 weeks

Mature rhizomes: 8–10 months

Edible harvests: from 4 months

How to Harvest
Gently move soil to expose rhizomes.

Snip small sections like harvesting herbs.

Cover the rhizome again and water well.

Rotate harvesting from multiple plants if growing more than one.

Propagation
Break a piece of mature rhizome with eyes.

Plant it in a new container to grow a new ginger plant.
