1️⃣ Melt the chocolate: Break the chocolate into pieces and melt it gently in a heatproof bowl over a pot of simmering water (bain-marie), or use the microwave in short bursts. Let it cool slightly.
2️⃣ Prepare the filling: In a separate bowl, mix the finely ground hazelnuts with the icing sugar.
3️⃣ Form the balls: Once the chocolate is cooled but still liquid, mix in the hazelnut-sugar mixture until evenly combined.
4️⃣ Shape the mixture: Use your hands or a small cookie scoop to form bite-sized balls. Place them on a tray lined with baking paper.
5️⃣ Chill: Refrigerate the balls for at least 1 hour until firm.
6️⃣ (Optional coating): For extra crunch, you can roll the chilled balls in crushed hazelnuts or dip them in more melted chocolate.
