Step 1: Prepare the vegetables
Peel and finely grate the zucchini, carrot, potatoes, and onions.
Place grated zucchini in a colander, sprinkle with salt, and let sit for 10 minutes to draw out moisture. Then squeeze excess water.
Step 2: Make the meatball mixture
In a large bowl, combine minced meat, grated vegetables (zucchini, carrot, potatoes, onions), breadcrumbs, egg, sour cream, mayonnaise, minced garlic, nutmeg, Provencal herbs, red pepper, black pepper, and milk.
Mix thoroughly until well combined.
Step 3: Shape the meatballs
Form medium-sized meatballs with your hands.
Step 4: Prepare mushrooms and cheese
Clean and slice champignons.
Grate the cheese.
Step 5: Air fry the meatballs
Preheat air fryer to 180°C (356°F).
Place a piece of aluminum foil at the bottom of the basket (to catch drips).
Lightly brush meatballs with vegetable or olive oil.
Place meatballs in the air fryer basket in a single layer.
Cook for 15-18 minutes, shaking the basket halfway through.
Step 6: Final touches
In the last 3 minutes, add sliced champignons and sprinkle cheese on top of meatballs in the air fryer to melt.
