Season the steak bites generously with salt and pepper.
Heat olive oil in a large skillet over medium-high heat. Add steak bites and sear until browned and cooked to your desired doneness, about 3-4 minutes. Remove steak from skillet and set aside.
In the same skillet, melt butter. Add minced garlic and cook until fragrant, about 1 minute.
For the sauce: Pour in heavy cream, add Parmesan cheese, and stir until melted and sauce thickens. Season with salt and pepper.
Return steak bites to the skillet and toss in the sauce to coat.
Garnish with chopped parsley if desired and serve immediately.
