Mix flour, salt, pepper, and optional paprika or herbs in a shallow bowl.
Dredge each pork chop thoroughly in the flour mixture, shaking off excess.
Heat olive oil in a skillet over medium-high heat. Brown pork chops for 2-3 minutes per side until golden.
Place browned pork chops in the slow cooker.
Add sliced onion and garlic on top. Pour chicken broth over everything.
Cover and cook on low for 5-6 hours or on high for 3-4 hours until pork is tender.
Optional: Before serving, thicken the sauce by stirring in a slurry of 1 tablespoon cornstarch mixed with 2 tablespoons water, cooking for a few minutes.
