Heat olive oil in a large skillet over medium heat. Add ground beef, onion, and garlic. Cook until beef is browned and onions are translucent. Drain excess fat.
Add Vegetables and Sauce:
Stir in diced potatoes, carrots, peas, diced tomatoes, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Pour in beef broth and stir well.
Simmer:
Reduce heat to low, cover, and simmer for 25-30 minutes, or until potatoes and carrots are tender.
Transfer to Baking Dish:
Preheat oven to 375°F (190°C). Transfer the mixture to a greased casserole dish.
Add Cheese and Bake:
Sprinkle shredded cheddar cheese evenly over the top. Bake uncovered for 15 minutes or until cheese is melted and bubbly.
Serve:
Let cool for a few minutes before serving. Enjoy with crusty bread or a side salad.
