Bring a large pot of salted water to a boil. Cook pasta until al dente according to package instructions. Drain, reserving ½ cup pasta water, and set aside.
Sauté the Chicken:
Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, Italian seasoning, and red pepper flakes (if using). Cook chicken for 5–6 minutes until browned and cooked through. Remove and set aside.
Make the Sauce:
In the same skillet, melt 2 tbsp butter over medium heat. Sauté garlic for 1–2 minutes until fragrant. Add chicken broth and heavy cream, simmering for 3–4 minutes to thicken slightly.
Add the Cheeses:
Stir in Parmesan, cream cheese, and mozzarella until the sauce is smooth and creamy. Add a splash of reserved pasta water if needed to adjust consistency.
Combine Everything:
Return chicken and pasta to the skillet. Toss to coat in the sauce. Simmer for 2–3 minutes to heat through.
Garnish and Serve:
Top with chopped parsley and extra Parmesan. Serve hot.
