Preheat the oven to 180°C (350°F). Grease a muffin tin or line with paper cups.
In a pan, melt butter over medium heat. Add chopped apples and cook for 5 minutes until soft. Set aside.
In a large bowl, mix oatmeal, sugar, baking powder, and salt.
Add milk, vanilla extract, and egg (if using) to the dry ingredients. Stir to combine.
Fold in the cooked apples gently.
Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 20–25 minutes, or until a toothpick inserted comes out clean.
Remove from oven and let cool before serving.
